Cinnamon Toast Crunch Cookies
Cinnamon Toast Crunch cereal is a staple in our house. My kids love it so when i found this recipe i knew i had to give it a try. Needless to say they didn't last long in our house!
INGREDIENTS:
1 1/2 cups flour
2 cups cinnamon toast crunch cereal crumbs
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
Mix above ingredients together and set aside.
In a mixing bowl add:
1 cup butter
3/4 cup white sugar
3/4 cup brown sugar
1 tsp. vanilla
2 eggs
Mix until blended well and then slowly add dry ingredients. With a small ice cream scoop make balls and roll in cereal crumbs. Bake @ 375 for 8-10 minutes.

AVOCADO SALSA
This salsa is quick and easy to make. It's colorful and most important, it's delicious! I made it yesterday for the memorial day party and everyone loved it!!
INGREDIENTS:
2 (11oz.) can shoepeg corn
2 can of black beans, drained and rinsed
3 tomatoes, diced
1 red onion, diced
1 red bell pepper, seeded and diced
1 jalapeno pepper, seeded and minced
2 avocados - peeled, pitted and diced
1 (16 oz.) bottle of zesty italian dressing
DIRECTIONS:
mix everything together and pour dressing over the top. gently stir until well mixed. Store in fridge until ready to serve. Yummy with tortilla chips.

GRILLED CHICKEN & PINEAPPLE QUESADILLA
Something about the weather warming up makes me want to get in the kitchen and cook and bake. I have found my new favorite blog. Its called The pioneer woman. BUTTER ALMOND CRUNCH
1/2 cup butter
3/4 cup flaked coconut
1 1/2 cups sugar
3 T. water
1 T. light corn syrup
3/4 cup sliced almonds
1/2 cup semi sweet chocolate chips
1. LINE A 13X9 PAN WITH FOIL. GREASE THE FOIL WITH PAM SPRAY. SPREAD COCONUT EVENLY INTO PAN.
2. IN A SAUCEPAN, COMBINE SUGAR, WATER AND CORN SYRUP. BRING TO A BOIL OVER MEDIUM HEAT, STIRRING OCCASIONALLY. ADD BUTTER; STIR UNTIL BUTTER IS MELTED. CONTINUE COOKING, WITHOUT STIRRING UNTIL A CANDY THERMOMETER READS 300 (HARD CRACK STAGE) REMOVE FROM HEAT AND STIR IN ALMONDS. POUR OVER COCONUT. COOL.
3. MELT CHOCOLATE IN MICROWAVE AND DRIZZLE OVER CANDY. COOL UNTIL FIRM. REMOVE FROM FOIL AND BREAK INTO PIECES. STORE IN AIRTIGHT CONTAINER.
